Lemon Sage Compound Butter

The sweet flavor of sage is carried deep into your piece of fish along with the tang of lemon.peel by placing a wonderful piece of this butter on top after cooking.
Cook time: 10 minutes
Yield: 1/2 cup

1/4 pound unsalted butter
1/2 teaspoon grated lemon peel
1 teaspoon sage - minced
1/4 teaspoon salt
Instructions:
1. Blend together all ingredients
2. Wrap in waxed paper and freeze
