Hazelnut Shortbread Gluten-Free Vegan

Crispy edges, tender in the center, these hazelnut rich shortbread squares are the perfect afternoon treat with a cup of tea.
Cook time: 35 minutes
Yield: 9 inch square

Equipment needed: 9 inch square pan-greased
Ingredients:
103 grams (1/2 cup)sugar
178 grams (1 1/4 cups) gluten free white flour mix
123 grams (3/4 cup + 1 tablespoon)hazelnut meal flour
1/2 teaspoon salt
5 grams (1 teaspoon) psyllium husk
144 grams (3/4 cup)vegan Shortening, I used Melt Brand.
1/2 teaspoon almond extract
Instructions:
1. Preheat oven to 350.
2. Stir together the sugar, flour, hazelnut meal, salt, and psyllium husk till one color. I use psyllium husk to create the structure of gluten free baked goods, in place of xanthan gum that gives my husband a bad reaction.
3. Blend in the shortening and almond extract.
4. Spread the batter into the prepared pan.
5. Bake for 30-35 minutes, till the top is browned lightly and the edges are just beginning to pull away from the edges.
