Banana Walnut Waffles Recipe- GF, Casein Free, Whole grain

Another Sunday, more waffles. This set was inspired by some wonderfully ripe organic bananas in the fruit bowl. They can easily be nut free if you leave out the walnuts. Could be soy free too if you use 2 cup of rice milk and just a 1/4 t of vinegar in place of the yogurt.

Banana Walnut Waffles

Makes 6 waffles in round waffle iron
1/4 cup sweet rice flour
1/2 cup teff flour
1 cup brown rice flour
2 T brown sugar
1 t baking soda
1 t baking powder
1/2 cup California walnuts – finely chopped
3 eggs
3 T oil
1 1/2 cup soy milk
1/2 cup soy yogurt
1 T vanilla extract
2 Bananas- smashed
Stir together dry ingredients.
Beat together wet ingredients.
Stir together both sets of ingredients.
Bake in prepared waffle iron per its instructions till golden brown
EAT!

These waffles look great! I've been trying to figure out how to sneak more teff into my baked goods - what a good idea to add them to waffles! Thanks for the recipe. Can't wait till next Sunday!

Oh, and I like your idea about the definition of foodie!! I think that I have to agree.
I might get the title of "foodie in training," though I don't think I have THAT much enthusiasm over a new recipe. (well, my husband may disagree!!) I do get a really bad itch to cook when I have a new recipe in my hand!!
Was curious if you are simply gluten-free by choice or if there is celiac somewhere in the family??

Hi Christian,
Love to add to the foodie family!
Our family is GF by "choice" if you call avoiding lots of symptoms and pain, "choice".
My husband is osteoporotic in his mid 40's, our daughters were Failure to Thrive at 6 years old. I had horrible gas, bloating and diarrhea. Decided that the gold standard of elimination and challenge would be far easier on all of us than lots of testing.
WE all feel so much better. The girls are catching up to their classmates in height. I no longer have the gastrointestinal complaints of yore and hubby is going for another bone density test in June.
My sis is Celiac too.
